CASTAGNACCIO | INGREDIENTS (SERVES 6) 200g chestnut flour, water, extra virgin olive oil, rosemary, pine nuts and raisins. |  | Sieve the flour and add some water, mixing well with a whisk to avoid lumps. When the mixture is runny but not dense pour into a large well-oiled baking tray. Sprinkle with 4 or 5 dessertspoons of extra virgin olive oil and scatter with some pine nuts, rosemary leaves and raisins (previously soaked for 2 hours in lukewarm water). Preheat oven to 180°C and bake for 35 minutes till dry and crusty on top. |
