BISTECCA ALLA FIORENTINA (Florentine beefsteak)

INGREDIENTS
3cm thick slices of beef T-bone steak, Extra Virgin Olive Oil, salt and pepper.
This is an extremely simple dish to prepare: place the steak on the grill and cook directly on the hot embers, with no flame, for roughly 5 minutes without piercing the meat. Turn the steak over and salt the cooked side leaving the other side to cook for a further 5 minutes, this side must also be salted once ready. The “Fiorentina” must be well-done on the outside and rare on the inside. Pour some Extra Virgin Olive Oil on the steak and serve with a dash of freshly ground black pepper and lemon juice if desired.
