INGREDIENTS Stale Tuscan bread, ripen tomatoes, onion, basil, olives, Extra Virgin Olive Oil, salt and pepper. If preferred: capers, 2 filleted anchovies, and vinegar. |  | Soak several slices of stale Tuscan bread in water, squeeze out excess water and mix the dampened bread with chopped basil, finely chopped fresh onion, sliced ripen tomatoes, olives and, if preferred, capers and a few filleted anchovies. Place in the fridge for 1 hour and add plenty of Extra Virgin Olive Oil before serving. |
